| JUICE BAKED CHICKEN BREASTS | |
1/4 c. fine dry breadcrumbs 1/4 c. grated Parmesan cheese 1 tbsp. parsley flakes 1/4 tsp. paprika 4 chicken breasts, skinned and boned (pound with mallet to 1/4 inch thick) Vegetable cooking spray 2 tbsp. reduced calorie butter 1/3 c. grape juice (red or white - we prefer red) Combine first 4 ingredients and mix well. Salt and pepper both sides of chicken breasts and dredge in breadcrumb mix. Spray pan with vegetable cooking spray. Arrange chicken in pan. Dot chicken with butter. Cover and bake at 350 degrees for 30 minutes. After 30 minutes, pour juice over chicken, recover and bake another 15 minutes. Uncover and bake last 15 minutes. Chicken may not need a full hour to cook completely. Serves 4. | |

Kate's Chocolate Chip Cookies
- Preheat oven 375*
- Combine flour, baking soda & salt in small bowl
- Beat butter, sugars & vanilla in large mixer bowl
- Add eggs one at a time, beating well after each
- Gradually beat in flour mixture
- Stir in chocolate chips
- Drop by rounded tablespoon onto ungreased baking sheets
- Bake for 9-11 minutes until golden brown
- Let stand 2 minutes, then remove to rack
*Best when eaten warm!

Turkey Bacon Rolls
1 Preheat oven to 375°F. Place each cutlet on a piece of aluminum foil (about 5x6 inches). Sprinkle each cutlet with salt, pepper, garlic, and basil. 2 Layer a slice of cheese and a couple slices of ham on to each cutlet. Starting with the narrowest end, roll up the cutlet tightly. Gently wrap 2 slices of bacon around each cutlet. Fold up the aluminum foil around the turkey roll and wrap it tightly. 3 Place in a baking dish and put in the 375°F for 25 minutes. Remove from oven and gently open up the aluminum foil wrappings to expose the bacon. Increase the oven temp to 400°F. Cook for an additional 10-15 minutes until the bacon is lightly browned. Cheesy Crustless Quiche
1 Melt the butter in a medium saucepan on medium heat. Stir in flour; cook, stirring until bubbly. Gradually add the milk; cook over medium heat, stirring occasionally, until sauce thickens. Remove from the heat; set aside to cool, about 15-20 minutes. 2 Preheat oven to 350°F. Combine cottage cheese, baking powder, salt and mustard; set aside. 3 Beat the eggs in a large mixing bowl. Slowly add the cream cheese, the cottage cheese mixture and the milk/flour sauce. Fold in the Swiss and Parmesan cheeses. 4 Pour into a buttered 10" pie plate. Sprinkle the top with chopped green onions and crumbled bacon. Arrange tomato halves, cut side up, around the top. Bake at 350°F for 40 minutes, until puffy and lightly browned. A knife inserted into the center of the quiche should come out clean. Let rest for 15 minutes, serve. Yield: Makes 8 servings.INGREDIENTS

Chicken Cordon Bleu
1. Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces. 2. Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the broth and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear. 3. Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.
*changes/adaptations: Definitely pound (1/2" thickness); Use 1/2 butter, 1/2 olive oil (3T of each) to keep butter from burning; add fresh herbs to the cream mixture at the end

Best Brownies - Ever
Ingredients
- 1 cup (2 sticks) butter or margarine
- 2 cups sugar
- 2 teaspoons vanilla extract
- 4 eggs
- 3/4 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped nuts (optional)
Directions
- Heat oven to 350°F. Grease 13x9x2-inch baking pan.
- Place butter in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 to
2-1/2 minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time,
beating well with spoon after each addition. Add cocoa; beat until well blended.
Add flour, baking powder and salt; beat well. Stir in nuts, if desired. Pour batter into
prepared pan. - Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan.
Cool completely in pan on wire rack. Frost if desired. Cut into bars.
About 36 brownies.

Stir together flour, cocoa, baking powder and salt; gradually add to egg mixture,
beating until well blended. Stir in nuts, if desired. Spread batter evenly in prepared pan. - Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan.
Cool completely in pan on wire rack. Prepare CREAMY BROWNIE FROSTING;
spread over brownies. Cut into squares. About 16 brownies.
CREAMY BROWNIE FROSTING - 3 tablespoons butter or margarine, softened
- 3 tablespoons HERSHEY'S Cocoa
- 1 tablespoon light corn syrup or honey
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar
- 1 to 2 tablespoons milk
Beat butter, cocoa, corn syrup and vanilla in small bowl until blended. Add powdered sugar and milk; beat to spreading consistency. About 1 cup frosting.

Mom's Broccoli Salad
½ cup chopped red onion
1 cup golden raisins
1 cup grated mozzarella cheese
Mix all ingredients together in large mixing bowl. (Either cut the bacon in small pieces before cooking or crumble before adding to mixture.)
Sauce:
1 cup mayonnaise
1 tablespoon sugar
Mix together with wire whisk and pour over vegetable mixture, stirring to coat thoroughly. Add salt and pepper to taste.

Whit's Cinnamon Pie
In double boiler (I make my own) combine evaporated milk and water. Mix together the 1 cup sugar, cinnamon, flour, cornstarch and salt. Stir into milk/water, then very gradually blend in slightly beaten egg yolks. Cut the half stick butter into several pieces and add to milk mixture. Cook in top of double boiler over simmering water, stirring constantly, until thick (consistency of pudding). Stir in vanilla. Cool. Pour cream mixture into pie crust. Delicious!
2 tbsp. flour

Dash salt
1 c. evaporated milk
4 egg yolks
1/2 stick (1/4 c.) butter

Mom's Banana Bread (aka Betty Crocker)
½ C butter or margarine, softened
2 eggs
1 ½ C mashed ripe bananas (3-4 medium)
½ C buttermilk
1 teaspoon vanilla
2 ½ C gold medal all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 C chopped nuts (optional)
- Heat oven to 350° F. Grease bottoms only of 2 loaf pans.
- Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
- Bake loaves about 1 hour - until toothpick inserted in center comes out clean.

2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed very ripe bananas (about 2 large or 3 medium)
1 large egg
1/4 cup (1/2 stick) butter, melted
1/4 cup fat free or light sour cream
2 teaspoons vanilla extract
1/4 cup low-fat milk
1/2 cup mini semisweet chocolate chips
- Heat the oven to 350º F.
- Line a mini muffin pan (ours made muffins 1 3/4 inches in diameter) with bake cups or lightly coat the muffin cups with cooking spray.
- In a medium-size bowl, combine the flour, sugar, baking powder, and salt and stir with a fork to blend.
- In a mixing bowl, combine the mashed bananas, egg, melted butter, sour cream, vanilla extract, and milk. Beat on medium until well blended. Reduce the speed to low and blend in the dry ingredients (do not overmix). Stir in the mini chocolate chips.
- Fill each muffin cup with 1 level tablespoon of batter. Bake the muffins for about 20 minutes or until the tops are golden and a toothpick comes out with some melted chocolate but no crumbs.
- Transfer the muffins to a rack to cool. Repeat with the remaining batter. Makes 36 mini muffins.

Cheese Boats (yes, these are real)
1 lb longhorn style cheddar cheese, grated
1 small can tomato sauce (2 cans if you can't find El Pato - but you'll be sad if you substitute)
1 small can El Pato hot sauce (look in the Mexican food section of your grocery store)
(1 small jar diced pimentos - optional)
(4 hard-boiled eggs, chopped fine - optional)
1 can diced green chiles (size of can is up to you!)
1/2 c olives, chopped fine
1 bunch green onion, chopped
4 t vinegar
1/2 C vegeable oil
salt & pepper
1-2 dozen small hard rolls
Combine all ingredients (except rolls) in a large bowl. Slice the tops off the rolls (keep the "lids"). Scoop out bread from inside roll (don't tear through). Carefully fill each roll with the cheese mixture. Place lids back on rolls and wrap in a square of aluminum foil. Bake at 350° until heated through and cheese is melted (approx. 20 minutes).
These can be frozen - but freeze BEFORE you bake and not after or they get soggy. Just bake longer from frozen state - no need to thaw!

Sweet & Sour Chicken
This is a healthified recipe - when I find the original, I will post it. It is a deep-fry version.
1-2 chicken breast, cubed or grilled & sliced - or whatever
1 C brown sugar (okay, so not all THAT healthy)
2 C water
1/2 C ketchup
1/2 C pineapple juice
2 t soy sauce
1/4 C vinegar
3 T cornstarch
(pineapple & peppers can be optionally added)
Cook chicken in whatever manner you prefer.
In small saucepan combine other ingredients and heat until thickened.
Pour sauce over chicken. Eat with sticky rice. :)

Mom's Enchiladas
1 lb Ground Beef
2 T grated or minced onion
1 C cream of chicken soup
16 oz sour cream
small can chopped green chiles
8 oz. grated longhorn style cheddar cheese
1 dozen corn tortillas (I like white corn)
cook 1 lb. gd. beef. Remove from heat. Add a couple of T of grated or minced onion. Combine 1 can c of chick soup, 16 oz. so. cream, and small can chopped gr. chiles. Grated cheddar (longhorn is best). Heat 6-8 tortillas at a time in the microwave - I spray them with cooking spray and stack them on a small plate. Assemble enchiladas... smear warm tortilla with soup spoon of green chile sauce, place a soup spoon of meat onion mixture across tortilla, sprinkle with cheese. Roll into enchilada. Continue until 13x9 pan is full, heating more tortillas as they are needed. Put a little milk in remaining sauce and mix. Spread on top of enchiladas, sprinkle with more cheese. Bake at 350 for 30-40 minutes.

Whit's Wheat Bread Take II
In breadmaker pan put:
2/3 C evaporated milk
2/3 C water
1 T oil
1 t salt
Add
2 C whole wheat flour
1 C white flour
2 T wheat gluten
1 T brown sugar
1 t rapid rise yeast
Bake on white bread 1.5 lb setting.

Low Fat Chicken Nuggets
Ingredients:
1 pound boneless, skinless chicken breasts
1/4 cup flour
1/4 tsp paprika
1/4 tsp freshly ground black pepper
1 egg white
1/4 cup low fat buttermilk
1 cup cornflakes, crushed
Preparation:
Preheat oven to 450 degrees.
Coat a baking sheet with nonstick cooking spray.
Prepare three bowls: one with flour and seasonings, one with egg and buttermilk stirred together, and one with crushed cornflakes.
Cut chicken breasts into 1 to 1 1/2-inch pieces.
Empty chicken pieces into bowl and roll in flour mixture.
Then, piece by piece, and shaking off excess flour, dip the chicken into the milk mixture, then coat the pieces with cornflakes.
Place chicken on baking sheet and bake for 10 minutes until golden, turning them half way through.
